Este desayuno de enfrijoladas rellenas de huevo, es tradicional en el puerto de Veracruz. En el desayuno, se he hecho común este platillo, ya que contiene todos los condimentos tradicionales de la comida veracruzana.

Ingredientes

  1. 8 tortillas de maíz fritas
  2. 2 huevos
  3. 1 chile jalapeño
  4. media cebolla
  5. 1 tomate
  6. frijoles refritos
  7. crema
    8. Chorizo

Pasos

  1. En una sartén con una cuchara de aceite fríe la cebolla, el chile y los huevos, agrega el tomate y reserva.
  2. Rellena las tortillas con esta mezcla y forma tacos pon 4 por plato.
    3.-  Las tortilas deben de reirse en aceite4.- Deben de remojarse en los frijoles ya machacados ( procure que los frijoles no queden tan espesos, para que puedan remojarse las tortillas)5.- Rellenas las tortillas y bañadas en frijol se enrollan se sirven y se bañan con crema y queso.
    6.- Por último se frie el chorizo y se pone encima de las enfrijoladas
