INGREDIENTES  

  • 4 pza huevos
  • 1 cda manteca de cerdo
  • 1 tza frijoles refritos negros
  • 1 pza ramita de epazote
  • 1 pza plátano macho

ELABORACIÓN PASO A PASO 

  • El primer paso de esta receta consiste en romper los huevos y esta parte, tiene toda una técnica, por más de que en primera instancia parezca simple; Los huevos no tienen que ir enteros, y tampoco es la idea batirlos antes de llevarlos al sartén, sino que simplemente hay que romperlos un poco, precisamente de ahí viene su nombre.
  • Luego los vertemos en la sartén, y les tiramos un poco de epazote encima, lo que es muy importante, tanto para agregar color, como sabor al plato.
  • Mover lentamente el huevo, para que se cocine muy levemente por ambos lados y antes de que la clara esté completamente cocida, es decir, mientras aún esté transparente, incorporamos los frijoles refritos negros.
  • Integramos los frijoles con los huevos, mezclando con la espátula y la pala, y una vez esté cocido, los moldeamos hasta que se formen dos rollos. Esos rollos una vez cocidos, ya estarán listos para emplatar y son conocidos como huevos tirados veracruzanos, aunque claro, aún nos falta preparar una deliciosa guarnición para acompañar este manjar.
  • Para ello, lo que haremos es cortar nuestro plátano en rodajas y freírlos por ambos lados, hasta que adquieran una textura mucho más suave y deliciosa.
  • Una vez ya tengamos todo listo, solamente nos queda emplatar y listo, ya podemos disfrutar unos deliciosos huevos tirados veracruzanos.
